Well, there are a few ways to go about fighting the Ultimate Cannon unit. Of course, the quantity-over-quality approach is one way of doing it, in which case low-cost Borgs like Delta II are basically ideal with their low costs. But I've never been a fan of that approach. What I typically try to do is charge into short range and attack it from there. You know, at that range where you could use its gun to stay dry in a thunderstorm. Some might call it melee range. Looking at your Borgs, Acceleration Ninja can get in range somewhat easily, and Normal Samurai and Shruiken Ninja can do a better job upon getting into that range.
I also notice a Poison Worm. If you could miraculously survive with it, you could poison the Cannons to near-death, then hit them one more time.
Hatchet Knight can probably make it flinch at long range and stop the beam, but I'm not sure if that actually works; Ultimate Cannon seems to be annoyingly resistant to flinching.
And Anubis Wing, along with being able to destroy almost anything, can take a shot from the Ultimate Cannon and live, so that might be something to try.
It's a rather difficult fight no matter what you do, though. (Okay, that's not true; Sirius can annihilate everything in it, but you don't have a Sirius yet, it seems.)

Samurai Shogun can generally just sit back and snipe the cannons from the spawn with its charge shot. I still think it's the most ridiculous attack in the game... Well, it can be hard to hit with, but if it hits, it OHKOs most bots, or very close to doing so. It charges pretty fast... And in the special mode when your meter is full, it charges instantly, OHKOs even big transforming borgs, and can take out ships in seconds spamming the charge.
EDIT: Wait, you have Death Borgs? I thought those were only starting at playthrough 2...

I don't have Samurai Shogun. I have Sonic Samurai. And yes, I have a Delta II, however, that's my only Death Borg so far. I guess they're not impossible to get on Playthru#1, but that they're just really, really rare.
Also, since last time: Beat all remaining the Sho battles. I felt that the two battles against Sho&Yuji were easier than the ones against Sho alone (except for the last Sho battle, lol) . I was able to troll Sho from afar with Normal Ninjas, and easily avoid Yuji, which lead to my victories.
Additionally, for the last Sho battle, I soloed it with Shuriken Ninja. Didn't even need to use my other borgs in reserve.
Also beat the Ultimate Cannon unit with QUANTITY FORCE. QUANTITY FORCE worked well in beating that dragon's den mission too.
Also F-ING YES I GOT MY FIRST BARRIER GIRL. Does she meet expectations?
Well, yeah, you can use that barrier to protect her and stop chip damage and stuff. Conceivably, if you're really skilled with her, you can solo entire forces with her. It's just that her shots are slow and easily dodged, which drags out fights. However, she's still a good borg.
Now for the all the spoils since last time. OH DEITY HERE WE GO.

Pop Honey, Hammer Robot, Megaton Robot, Copy Man, Alien Insect, Magnet Robot (+) (Is this new?), Ring Valkyrie, Gatling Tank, Normal Samurai?, Thunder Robot, Thunder Robot ALTERNATE, Orange Fighter, Beam Wing Blue, Fire Dragon, Blade Wing (Got the 2nd data crystal I needed from the last Sho fight), Build Robot, Carrier Helicopter, Akuma Samurai, Tornado Valkyrie, Tornado Valkyrie ALTERNATE, BARRIER GIRL (now at Level 2), Magnet Robot (-), Sonic Samurai ALTERNATE, Ghost Knight, Army Robot, Kung-Fu Master, Normal Tank ALTERNATE, Tao Master, Ice Valkyrie, Sword Knight, and another alt Wire Gunner.
Too exhausted to type out the new data crystals.
So yeah. Now, I'm right before The Decisive Battle! Defeat the Cosmic Dragon!
Also Shuriken Ninja is now Level 7, and Claw Robot is Level 6
So any tips for right now, what new borgs to try out, or comments?

Try Carrier Helicopter.[/joke] In all seriousness, though, none of the new Borgs you listed really stick out as Cosmic Dragon slayers... but you already killed it once, so I guess you've already figured out how to kill it. As for just in general what to try, I'd recommend trying Orange Fighter, mostly because I used an aerial armada to complete play 1 and half of it was Orange Fighters. I'd also recommend the Fire Dragon, but if you try it don't get your hopes up for it to be a weapon of mass destruction; the smaller dragons are never as good. Also, you know, it'd be quite an accomplishment if you could somehow manage to make the Carrier Helicopter not look like crap, so that might actually be worth an attempt.
Speaking of things I've not achieved, your Shuriken Ninja is higher in level than mine. Your Claw Robot probably is, as well.

Ring Valkyrie is a pretty good beginner borg, as is Beam Wing Blue. (Beam Wing Red is actually better than Beam Wing Blue, but you don't have Red yet.) Gatling Tank is pretty good, but tanks in general are kind of bad since they suck at moving. Still, Gatling Tank can rip through most borgs in seconds and has a ridiculously fast reload time. Orange Fighter is another good one, but only if you play it a certain way. Otherwise, it's probably not worth the cost. Planes also have a weird movement scheme, so it may take some getting used to.

If you don't like her shots, try using her sawblade-y thing for meleeing. Doesn't do as much damage as it looks like it might, but it's fun ;D

Just now, from my newest Gotcha session, I got an alternate Panther Robot data crystal. Beat the Cosmic Dragon mission and Retake Serenity Street with QUANTITY FORCE. The latter was quite difficult; got knocked down to my last borg, my Shuriken Ninja. Also Sho joined me. Yay! Borgs I got in this short session: Magnet Robot (+), Double Ninja, Command Girl, Alternate Double Ninja, (New Borgs: Elemental Knight (Received from the Cosmic Dragon battle), Death Borg Iota), Wire Girl, Vampire Knight, Gatling Tank, Normal Samurai. Also got Met and Yuji to join me but meh. Also the Elemental Knight looks interesting. It really annoyed me in the fight against Orochi. How well does it play?

I personally find it awkward to use; I struggle to get a good hit with its melees, you can only use its B shot punch thing once before you're automatically meleeing, and the X sword throw has a lot of lag after it. I'm sure with a bit of practice it's not that difficult to use it effectively, though.

His B shot punch is a good way to start a melee fight and his X attack is useful if your up against something that shoots a damaging beam right at you, like the beam gunner, beam wing red or a sapphire knight. The X attack makes you fall to pieces for a few seconds which are brilliant for surviving the attacks.

I got Hyper Mode a lot of times, which allowed me to be aggressive with meleeing the enemy Girl Borgs into oblivion. I also fought some other Barrier Girls, and I beat them down with melee, which seems to be the best way to take down opposing Barrier Girls. She even survived the whole match. The shield allowed me to be aggressive, and in Hyper Mode, the barrier pretty much instantly recharges. Barrier Girl is now level 3. ~ <3 More to come. EDIT: Okay, I really like meleeing with Barrier Girl, especially in Hyper Mode. Meleeing with her is high-risk, high-reward. Although it might cause her barrier to break sooner, it will build up a charge for Hyper Mode faster. In addition, enemies will die faster, and it will knock them around, delaying them until you can put up another barrier. Also, I love having Sho around. I beat the Defeat the Angel and Wing Borg unit! mission, or whatever it was called, with Sho at my side. It was real fun, and I saw some Blade Wings, and even some Anubis Wings. Meleeing with Barrier Girl took down the Jet Heroes, and she even survived the entire battle and got the last shot on a Blade Wing. Spoils since last time (New borgs will have a + at the end; Uncertain borgs will have a ?): Copy Man, Chainsaw Knight, Powered Gunman, Normal Tank, Patra Witch+, Spinner Girl, Jelly Diver+, Normal Ninja, Shuriken Ninja, Kung-Fu Master, Alternate Normal Samurai+, Tao Master, Ice Valkyrie, Ice Dragon+, Build Robot, Remote Bomber+, Time Bomber+, Pop Honey, Ring Valkyrie, Jet Hero+, Hammer Knight, Normal Knight, Thunder Robot Force #1: Level 7 Shuriken Ninja, Level 3 Barrier Girl, Level 6 Claw Robot, Level 3 Command Girl, Level 2 G Black, Level 1 Neo G Red
