I play Gotcha Force normaly. One day, I was hit by this wide attack (might have been the projectile slash of a Imperial Knight), and my body twitched once it hit me. After that, I've been twitching every time I've been hit by a wide enough attack. Has this happened to anyone else? Or am I just too addicted to GF?

that's pretty weird. I think you're just reacting to it out of habit. It shouldn't be to hard to break out of it.

Sometimes people flinch from bright lights so it's possible (not very likely, but maybe possible) that one instance somehow conditioned * you. You said that it only occurs on wide enough attacks, so I think you have somehow become conditioned to twitch to a large enough flash of light. I'm no expert on this so the best advice I can give is to see if it continues and what happens if you stop playing Gotcha for a while. Or just don't get hit. *I don't mean classical conditioning, because I know classical conditioning is different, but I can't think of the correct word right now.
